Samsung Tablet - Is is just me or is it impossible to set it up in a private way? Any tips or non-starter?

It seems like it forces you to integrate your phone number and/or email in order to use or install apps, and even forcing the creation of a Samsung account for some things. And then I tried to uninstall, disable, take off permissions for as much stuff as I could (I only want to use a handful of apps on it and certainly no AI or voice recognition assistant stuff).
