I need some advice for a privacy program, with E2EE to share with my therapist

I've read through the wiki and did a few searches and didn't find anything exactly what I'm looking for and thought I could get some answers here.

I have PTSD and we are trying to keep track of symptoms, triggers, flashbacks, etc. The goal is to find patterns so my therapy and treatments will be more effective.

I already write these things on paper, but if I made my own spreadsheet in LibreOffice, it would have to wait until therapy …
