Getting Started Learning Microsoft 365 and Azure Security

I'm starting to delve into the Microsoft 365 and Azure Security stacks (Microsoft 365 Defender, Defender for Cloud Apps, Microsoft Purview, etc.), but it's a bit overwhelming and confusing. Microsoft keeps changing names and portals, so much of the training and videos I find are dated.

Does anyone have a basic "roadmap" that would be good to follow to get started learning these services more in-depth?

I'm at a slight disadvantage because my org is only licensed for Microsoft 365 …
