What data can Microsoft/Google get from me when I use their email clients?

So I’m pretty new to all of this and I’m gradually working my way through trying to find out what I can change to prioritize privacy. Anyway, I’m now at the mail stage, and have seen a lot of recommendations for ProtonMail, Tutanota and so on. My issue is though that it’s hard to find any specific information about what risks I’m taking using Outlook/Gmail that Proton etc negate.
