What are the obvious privacy / anonymity differences when using home WiFi vs sim data?

Let’s use Telegram for example, as I need to use that for the time being till I can convince my workmates to switch to something better;

AFAIK, Telegram knows the phone number I used to sign up with & my IP address - so what are the anonymity / privacy advantages to using phone data over home WiFi for my use case, if I’m already using Orbot whilst on the app?
