US Cybersecurity employees with unlimited PTO, how much time off do you actually take?

I don't believe this is fair as the reason I can't take more than 3 weeks is because I work a live service rather than project work, meaning if I take off it directly affects backlog of items. Many other teams at our organization are able to take more.
