Undoing disastrous cookies selections on unknown websites

In the beginning of this new phase of the internet when every website started asking for us to make cookies selections, in a time crunch, I mindlessly clicked through without adjusting the selections to only strictly necessary cookies on a few websites. I don't remember which sites I did this on and have no way of knowing as I've deleted the browsing history for the time in which this happened.
