Steps to mitigate Toyota car tracking?

My Dad got a brand new Toyota Camry and through a weird set of circumstances I am buying it off of them now.
The only thing is, I don't want to be data mined.
I use no google services, no sim, and Linux with full disk encryption on my desktop.
