Security Engineers, what do you actually do?

The more I read about Security Engineering roles, the less I understand what a Security Engineer *does.* I'm aware that this position means different things to different companies, so I just wanted to ask:

What do you Security Engineers do (or used to do), and would you consider your role "engineering" or is it engineering "in-name-only"?
