Secure Container Options for Production Environments

I've noticed a growing trend towards **rootless containers** lately, with options like `Rootless Docker`, `Podman`, and possibly `Rootless Nerdctl`(although it's not that popular).
Interestingly, most of the information on the Sans Institute website revolves around Docker, but not the rootless version.
Running Docker as root isn't the most secure approach. So, I'm curious to know: What container solutions are you currently using in your production environments and why?
