Projects in Incident Response Role?

Curious, what are some projects you have done or think would be a good idea to do if you work as an analyst in the Incident Response/Security Operations team?

I currently work as an analyst in IR and one my projects as of now is finding a edr solution for the company. This requires me to understand what endpoints we need agents on and evaluating around 2-3 edr solutions (getting POC’s, feedback from colleagues, etc.)
