Is a privacy friendly web analytics tool even a real thing?

I remember that back in the days you would take raw Apache (or some other web server) logs and parsed them in some tool. Every visit was logged with IP address. You could see how user moved across your web site. There was no way to connect data between sessions since no cookies were used. I'm not sure if you could disable IP logging.
