There are the standard duties of checking ID and badges, stopping unauthorized entry, stopping transport of contraband in or equipment out, responding to building access requests, finding lost people or items, preventing tailgating, responding to crises, etc., but I would think that there are a lot of things that initially look to be concerning, but are not in the training literature, and that just end up being fun stories to tell at parties.
