Past employer sent me notice of data leak in their system, can I legally request they not store this data?

A company I worked for a few years ago sent me a letter saying a piece of software they used for a data migration had a known breach and they believe my name, SSN, and medical and diagnosis history was leaked. blah blah "we take data seriously here's 2 years free credit monitoring".
