Is de-googling useless without a custom os ?

I'm trying to debloat my phone by removing google stock apps like , google phone, google maps , google assisstant, etc...
But I read (on other posts), that only google apps work correctly, the alternatives have issues.
Should I keep degoogling or not change anything ?
