iOS app tracking

Looking through my settings I came to notice that I gave some apps permission to track me. Normally, I always reject that permission. I’m trying to learn what this actually does.

As far as I can tell, apps that have permission would only receive some IDFA number that identifies me, which is not a big deal to me.

However reading through apples disclaimer I think they could also obtain my email?
