I'm once again asking you for phone recommendations

So, the Huawei phone I had since 2016 just got utterly destroyed and I need a new one.

I'm looking for something that absolutely has no assistant or is at least easily deletable (google assistant sometimes tries to reactivate itself when I swipe the screen a certain way, couldn't find a way to solve this), also having the option to disable microphone and camera when not in use would be great.
