I want to take the privacy plunge and install GrapheneOS on a Pixel, but is it redundant if I then install Instagram, WhatsApp etc? Or is it still worth doing?

I'm happy to and already use some alternatives like magic earth for navigation, signal, proton mail DDG etc.
But does it make the OS change redundant to then use common known non privacy conscious apps on it?
I appreciate any help :)
