I received spam mails with content of one specific shop i bought stuff with my debit card one hour before

Some quick background about myself before i explain the case in more detail:

I work as a data scientist and am well aware of privacy issues. I dont share my email easily, use the hardest brave browser adblocker, message over signal and turn off wifi and location always. Usually i receive nearly no spam mails except maybe one crypto related spam mail once a week.
