How to keep data secure on USB Drive

I am looking to keep infomation on a USB drive for ease of use, while also having the peace of mind of security. Is this the correct method?
- Take files and encrypt them, using a GOOD password written down on paper, not kept on PC. (Can someone tell me a good program for this? I use 7zip with "add to archive" function and use .rar to encrypt them. Is there a better program OR encryption method (like .rar / .rar4 …
