How to delete data google has on you when signed out

Since 2020 you can choose to delete all the cookies and search history and tracking data google has on you from you account but if you aren’t signed in while using google for example using safari surely it still tracks your data and search history etc so is there a way to delete this as I don’t feel comfortable with google storing all that personal data.
