For example I downloaded VS Code on my Debian installation by adding the Microsoft repo (to get the latest packages). What can Microsofts servers gleam from my system whenever my system fetches for updates from external repos like Microsofts? I realize they can see my IP, but what other metadata can they gleam from my system? Can a proxy like Protons guard my IP?
