How much information can a potential employer legally search for?

This is kind of a broad question but I am not that familiar with internet privacy outside of not sharing photos of myself or putting my name on my accounts. I understand that data is constantly being collected, but is what I do enough to prevent a potential employer from finding my anonymous accounts?
