How do you deal with not volunteering additional personal info when requesting your info be deleted

I provide disinformation on accounts I’ve stupidly signed up in the past. Then I request to have my data erased.

But some of the companies/organizations are requesting

Names

Addresses

Phone Numbers

and in some cases an ID uploaded

I feel like I’m being held hostage, which I am because I refuse to give them an id.
