How are some apps circumventing (forbidden word) on mobile?

Some travel directions apps like magic earth and others even the browser on many occasions are able to circumvent the veeee(peee)n and not sure how or how to resolve this. Apps like Proton and Netguard....btw which is better? Seems like Netguard give you more control over the individual apps connections
