I'm trying to put together a virtual home lab to practice removing into devices and pulling off logs of importance which would be used in IR or subsequent criminal proceedings.

What VMs should I create to practice against?

What else are the common devices you would be doing a live job on?

And what at the most likely services you would be pulling logs from?

Databases
Websites
