Help setting up an AWS/In-House Lab Project?

I want to flare my skills and hone them in towards my goal of becoming a Cybersecurity Architect as well as for my next job as a DevSecOps Engineer in the AWS Cloud. I do not know what to do for a lab project or even what product to maintain/harden.
