What's the difference when it comes to privacy?

How **exactly** would one be better than the other? In what **practical** ways? Can you give me a scenario/example? Not just generic "you get better privacy and isolation with GrapheneOS" sorta answers.

My concern is more privacy than security. The phone won't have anything worth losing sleep over if compromised. I'll be using a GrapheneOS phone for more sensitive data.
