Finding privacy balance

i am a daily linux user, but also an apple user (iphone, ipad, apple watch). I wan't to find my balance into privacy because i don't think that getting any data collected at all is a solution, data is obviously useful.
So i wan't to know how much do we need to put ourselves into solutions like calyxOS, nextcloud, linux and other stuff ? isn't it possible to stay into apple nice garden (in my case) ?
