Encryption at Rest - On Prem Servers

I've posted this in Sysadmin. but posting it here as well.
We've set up a dedicated infrastructure for our client and have been supporting them for a couple of years now. They've initiated TPRM (Third Party Risk Management) and have been requesting details regarding 'Encryption at Rest.'
