Does it make a difference to use open-source mobile applications instead of proprietary equivalents?

This is probably a silly question (I hardly ever use my phone, so I'm really a beginner on the subject), but I recently downloaded F-Droid and some open-source applications from the Simple suite (Simple Camera, Simple Gallery, Simple SMS, etc.).
Since I have a Samsung Galaxy, I also have Samsung apps that perform the same functions (gallery, SMS, etc.).
So my question is: from a privacy and security standpoint, am I really better off using open-source applications than Samsung's …
