Do Apple and Alphabet spy on competitors through their services?

Almost everyone uses Apple and Google technology. Do those two companies spy on their competitors when they do? Like, do they go through their emails to learn of rival bids or through their documents to see the content of their contracts, their financial situation and things like that?
