Dealing with privacy anxiety

A little context to the situation. I’ve recently been job hunting and have attended multiple job interviews. I managed to secure 2 jobs, but backed out of both (completely my fault, being indecisive), and am now on the hunt again. However, for both of these jobs, I gave a lot of private and sensitive information, including full name, address, phone, email, signature, drivers license, passport, birth certificate, etc.
