Corporations want security for me but not for thee

I was put in a bad position by my previous employer and had to quit. A new company that is taking FOREVER to on-board me seems to only care about their own security and not give one thought about my PII.
Just letting you know that they are policing to make sure THEY know all of the details they need and that you give up all of your info to third-party companies which process I-9,s etc. But have NO IDEA …
