Companies to support who don't require you to give them your data?

I don't know if this is the right place to ask. I'm sick and tired of all the devices that require I use their service to use the device.

I want to put camera's up around my house. Maybe even a doorbell that takes video. What I don't want is a device that "phones home". No company needs to know every time my doorbell rings and they certainly don't need access to the camera's around my house.
