Can public wifi's REALLY detect everything a user does? Especially public school wifi's?

I'm currently using Microsoft Bloat (The Xbox Game Bar) to bypass Safe Exam Browser, but im still using my school's public wifi. So far, i haven't been caught, but i'm worried my activity might've been monitored. Please help!
