Can Google access data of other Android apps not connected to Google account?

I was checking my Google account activity history and I saw Google keep too a history of which app you have opened. It doesn't seem to collect any more data than that.

My phone is a Samsung galaxy a30s, connected to Samsung account and to my Google account, for backup and Google services use porpuses.
