Apple or Amazon spying on us (big surprise). Has anyone else experienced this?

Today I just received a voicemail-to-text, from an unknown number, of a conversation I had with my wife last night. My main iPhone messages app shows the first part of the conversation, which I immediately recognized, but when I tap into the text to see the rest it’s blank. Very creepy and turned off Siri, which I never use, but I’m considering tossing/ selling our Amazon echo hardware. I’m curious if anyone has seen this, or has any insight into …
