Amazon Echo Show listening even when the mic is "turned off"?

Background: I got my Echo Show 5 last year. I bought it just to use as a smart clock because it looks cool to me, I rarely use Alexa as voice assistance, so the camera and mic on it are always off (the mic button glows in red). I use Safari with "Prevent Cross-site tracking" and "Hide IP address" settings on on a MacBook Pro. I've done everything I can to protect my privacy.
