Advice needed: Is it possible to find a career free from invasive tech?

My family is almost completely resigned to allowing anything and everything in the name of preserving their jobs, even taking optional courses and allowing for data collection to make a couple extra bucks/ save on health insurance. I empathize, but I value my privacy more.
