Tips for privacy software on MacOS

Recently just got a macbook and I am looking into which apps I need to replace from apple with more privacy focused ones. I'm mainly looking for a seamless experience but willing to make some sacrifices for privacy. My concern with privacy is Apple being apple to see what I'm doing, which freaks me out.
