Samsung vs iOS in terms of privacy?

I really love Samsung galaxy phones and am thinking about going back to them after using iPhone for a while. I’m just wondering in terms of privacy if I were to disable / not use most of the default Samsung / google apps and instead used apps that are more privacy focused would it have better or around the same privacy as iOS? Or would it be better to stick with iOS as I am not really interested in going …
