Recommended resources for class project

Hi /r/cybersecurity, I'm currently in a grad-level intro-to-cybersecurity class from another engineering discipline, and we have a course project that is a combo research paper + application project.

My group has settled on the topic of pdf injection attacks/implementation and mitigating/guarding against these. In addition to researching/reporting on the issue, we also will need to do at least a basic demonstration. Can anyone recommend good resources/academic papers that would be fruitful in our quest for knowledge?
