PDF - how to remove all metadata / exif?

need to remove all metadata from about 1500 PDF files. 90% files are scans and saved in Photoshop, so in exif viewer I see "Writer: Adobe Photoshop".
How can I remove everything from files please?
Tried exiftool but it can't remove photoshop tags.
