I need a secure (self hosted?) yet modern and somewhat feature rich digital scrapbook/note taker/data repository - advice needed

Think Evernote/Notino/Trello/etc. but in a secure (open source? E2E encrypted, no data mining, …) way.

With ability to sync across devices (iOS & Windows PC in my case).

I need to be able to dump links, text, media, PDFs, etc. in it in an organized and configurable way.

Any suggestions?
…or am I delusional thinking such a thing exists?
