Handwriting to text conversion and privacy friendly

I am looking for a solution to write without staying hours in front of a computer screen.
I thought of e-ink tablets (Remarkable, Supernote, etc.) but none convinced me (they do not care about privacy, subscription plan, ....).
Then I came across smart, reusable notebooks like Rocketbook, among others. This is a very interesting option in my opinion: it is almost real writing, without consuming too much paper and with the possibility to convert handwriting to text.
