change privacy settings on Xiaomi Redmi 10C

So I bought a new Xiaomi Redmi 10C today and before I could anything the seller already set up the initial process for me, and I saw them leaving some options on but couldn't read what.

As a pretty privacy conscious person this was pretty frustrating to me so I need to know if it's possible to change those settings now, after the setup. I'm willing to reset the device if that's what it takes.
